Dairy Free Lasagna Soup

So my significant other, Chad, LOVES Lasagna… and your girl Katey can’t have traditional lasagna, so I found and perfected this recipe so we both can have it and be happy!

Ingredients

  • 1 Tbs Olive Oil
  • 1 lbs Lean ground beef
  • 1 Medium yellow onion
  • 1 tsp garlic
  • 32 oz of chicken broth (I add another 16oz just to have more broth)
  • large can (16oz) of diced tomatoes (or two normal sized (8oz) cans)
  • 1 tsp Dried basil
  • 1/2 Tbs Dried oregano
  • 1/2 tsp Dried rosemary
  • 1/2 Tbs Dried parsley
  • Pepper
  • Dried lasagna noodles (8-10 noodles)

Instructions

  1. Brown lean ground hamburger in skillet (I’m grateful that Chad and his Dad raise beef cows so we always have lean hamburger that we know where it came from)
  2. Season with pepper
  3. Drain fat from beef, if any and set aside the beef

4. Heat 1 Tbsp of olive oil in pot 
5. Add chopped onion and cook until it begins to soften, roughly 3 mins.
6. Add in garlic and heat for 30 seconds

7. Pour in chicken broth, diced tomatoes, tomato sauce, basil, oregano, rosemary and thyme

8. Bring to a boil, then reduce heat, cover and let it simmer for 20 minutes
9. While that simmers break lasagna pasta noodles into smaller pieces
10. Cook pasta according to the package instructions
11. When noodles are finished cooking, strain noodles
12. Add cooked noodles to the soup and let it simmer for a few minutes
13. Add more chicken broth if you so desire
14. Add in the dried (or fresh) parsley

At the very end I add shredded cheese to Chad’s bowl of soup and leave mine as is (to be dairy free). Enjoy!
