Let’s all be real, who doesn’t love hot apple crisp on a cold winter day?! Well I sure do, so I decided to dairy free an apple crisp recipe. Now I have to say, this recipe is amazing… so amazing my dad requests it ALL THE TIME!
So let’s dig into this!
Ingredients
For the crumb topping
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 1/2 cup light brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- dash of salt
- 1/3 cup butter substitute (earth balance buttery spread) cut into small pieces
For the apple filling
- 4-5 medium – large Honey Crisp Apples (sometimes I use more)
- 3 Tablespoons butter substitute (earth balance buttery spread) melted
- 2 Tablespoons all-purpose flour
- 1 Tablespoon lemon juice
- 3 Tablespoons almond milk
- 1/2 teaspoon vanilla extract
- 1/4 cup light brown sugar
- 1/2 teaspoon ground cinnamon
- dash of salt
Instructions
- Preheat oven to 375 degrees F
For the topping
- In a medium size bowl mix the crumb topping ingredients together with a fork or a pastry blender. Mix together until it’s like small crumbs. Place in refrigerator while working on the next steps.
For the apple filling
- Peel and slice the apples and place into 8×8 baking dish.
- In a small bowl, mix together melted butter substitute and flower until blended. Add lemon juice, almond milk and vanilla – stir well. Stir in brown sugar, cinnamon and salt.
- Pour apple filling mixture over apples and toss to coat. Spread apples into an even layer filling the 8×8 baking dish.
- Take crumb topping from the refrigerator, mix well and then sprinkle on top of apples.
- Bake for 30-35 minutes or until golden brown on top.
- Remove from oven and allow to cool for 10 minutes.
