Have you ever been asked to bring something to a get together and had no idea what you could whip up in a very minimal amount of time? No? Well I have, so here’s an easy and “healthier” option to bring to a gathering!
Ingredients
Chop:
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 1 jalapeno
- 1 red onion
Mix In:
- 1 can of corn
- 1 can of great northern beans
Boil in pot:
- 1/4 cup of olive oil
- 1 cup of sugar
- 3/4 cup of apple cider vinegar
Once cooled, mix the liquid with the veggies and put in refrigerator overnight. If you’re in a huge rush, leaving in the refrigerator for a 3-4 hours will work just fine as well. Serve with chips (I like the scoops!)
